Happy Hump day! Although, to me, today will be the start of my weekend. I’m taking tomorrow off work. After working at the same job for four years, I just found out that I get flex days!
Yup, I definitely felt pretty stupid and also a little ripped off. However, it makes me feel a little better about the occasional blogging and social media that I do during work hours. 😉 Since my year end at work is March 31, I have four flex days to use up before the end of March. It’s kind of perfect because I’m heading to the mountains for a ski trip Thursday night and I was stressed about fitting in my long run. Now I have the day off and my problem is solved.
Anyways, all that really has nothing to do with today’s blog post which is all about food! I’m joining the What I Ate Wednesday craze to bring you some of my recent meals. I decided this time, to show you what a weekend looks like because often what I eat on a weekend is different than a weekday. It’s a little more 20 out of my 80/20 rule, if you know what I mean. 😉
Fair warning, my photos are not perfectly styled, they are simply pictures of what I ate right before I ate it. Sometimes, you just have to keep it simple.
Breakfast was two slices of toast with peanut butter and some microwaved egg whites. Eggs and toast are my go-to breakfast when I have a long run scheduled because it seems to digest quick enough and keep me fueled for my run.
About halfway through my 9 mile run I took a Cliff shot. I’ve been liking the Cliff gels over GU because of their thicker consistency. However, when you’re running in winter, that thicker consistency turns to a solid and makes it very tricky to get down. Noted for next time!
After my run I rehydrated with tropical nuun as I stretched and rolled by the fireplace. My new favourite thing to do post-winter runs. Normally I also have a smoothie post long run but I was out of spinach and can a smoothie really be made without spinach?
After I showered, I was absolutely starving since I didn’t have my smoothie. So I sliced up some cucumbers with salt & pepper to munch on while I prepared the rest of my lunch.
Lunch was a plate of sweet potato nachos which are my newest obsession ever since having them at Ange’s house for Bachelor night. The sweet potatoes are topped with black beans, tomatoes, mozzarella cheese and chicken cooked in salsa. Then I had a generous dollop of sour cream on the side. This lunch hit the spot!
After lunch I headed out grocery shopping. Once in a while as a treat I pick myself up a M&M cookie from the bakery section because I LOVE M&M cookies.
Supper started with a mixing bowl salad. Lots of romaine topped with cucumber, craisins, hemp hearts & sesame ginger dressing.
Yes, I realize that doesn’t look very appetizing but I promise it was delicious! That is a Wild Onion nut burger. A vegetarian burger that I just cannot get enough of. I didn’t have any buns at home so I just topped it with some mustard and it was perfect. Also, not pictured a very generous sized glass of wine. It was at the end of the bottle so it didn’t make sense to put back just a small amount, right?
In the evening I had a Purdy’s peanut butter finger which I forgot to take a picture of because, when it comes to chocolate I don’t waste time.
As I headed to bed that evening to read, I sat there and realized I was starving. Runger is real thing! So I got out of bed and ate a few beet crackers so that my stomach wasn’t growling before bed. Obviously that was my body telling me that I didn’t eat enough during the day.
Was my day of eating perfect? Nope, I realized I didn’t eat a single fruit and I had two treats and a big glass of wine. But that’s okay, I don’t strive for perfection. I strive for balance, moderation and enjoyment. Not everyday looks like this and so in the setting of a weeks worth of food this day perfectly fits into my healthy lifestyle.
