Who likes pasta?
That’s right everyone does! And if you don’t well then we aren’t friends anymore. Just kidding, we can be friends but you won’t be invited to my house. 😉
In case you haven’t noticed, I love pasta! So when I was invited by Catelli to try out their brand new Healthy Harvest Ancient Grains pasta, I was very excited.
The event took place at the SAIT Culinary Institute in Calgary. There was a group of local bloggers there and celebrity Chef Lynn Crawford!
After some socializing with bloggers and eating some delicious appetizers prepared for us, Chef Lynn got to telling us about the 5 ancient grains contained in the Catelli’s Healthy Harvest Ancient Grains pasta.
Quinoa– The most well known of the ancient grains. High in protein, fibre & minerals. Easily used as a rice substitute in recipes.
Amaranth– Rich in protein and contains all the essential amino acids as well as a variety of vitamins & minerals.
Pro tip from Chef Lynn: Heat on dry heat and the grain pops up and is great used on salads. Also great for coating fish/meat
Teff– Likely to be the next “superfood” on the market. It has twice the iron and three times the amount of calcium compared to most other grains. This grain is versatile and can be cooked into a variety of different recipes.
Sorghum– Known to support digestive health and has a lower glycemic index than many other grains. Another good rice alternative with a chewier texture.
Millet– A nutty flavoured grain known to be heart healthy. Contains high levels of magnesium & niacin. Easily digestible grain & gluten free. This grain is great for granola bars.
Next up, Chef Lynn was ready to teach us how to cook up the Ancient Grains pasta & create delicious recipes. The pasta itself was delicious. It has a texture that’s unique to white or whole wheat pasta and paired with Chef Lynn’s sauce, it was divine!
After the demo it was time for us to get to work cooking up our own recipe. Chef Lynn came around and helped us out and chatted with us. I definitely appreciated her tips on properly holding a knife and chopping vegetables. I think she was pretty scared I was going to chop off my own finger.
After I finished up my pasta, I got the taste test and passing grade from Chef Lynn.
Now of course I won’t leave you hanging without Chef Lynn’s delicious recipe!
- 1 pkg Catelli Healthy Harvest Ancient Grains Spaghettini
- 2 cups snow peas, thinly sliced diagonally
- 1 cup shelled edamame
- 1 english cucumber, sliced
- 2 cups napa cabbage, finely sliced
- 1 red pepper, cut into matchsticks
- 3 green onions, thinly sliced
- 1 ripe avocado, sliced
- 1/4 cup cilantro leaves
- 2 Tbsp black sesame seeds
- 1/4 cup seasoned rice vinegar
- 3 Tbsp canola oil
- 2 Tbsp soy sauce
- 2 Tbsp lemon juice
- 1 tsp lemon zest
- 2 tsp brown sugar
- 2 tsp sesame oil
- 1 tsp grated fresh ginger
- wasabi - to taste
- Cook pasta according to package directions; drain well. Toss with oil & lay on cookie sheet to cool
- Whisk together ginger wasabi dressing
- Add all vegetables (excluding avocado) to bowl
- Add in cooled pasta & toss with ginger wasabi sauce
- Garnish with cilantro leaves, black sesame seeds & avocado slices
